Lunch on a Hot Day

Soak dry garbanzo beans overnight in the slow cooker.  In the morning, take it outside and turn it on low, cooking them until they're soft (I just check on them as I run by doing housework - maybe 4 hours?).  Freeze in 1 and 2 cup containers so you can make hummus and tabbouleh, summer staples at our house.


Hummus on daily bread.  My hummus recipe includes cumin and tahini.  Sometimes we add a sprinkle of sumac too.


First cucumbers and last lettuce to go with it.

Popcorn.  Always popcorn when we have sandwiches for lunch.  And this time there was icy mint tea as well.

Admittedly, I've been lazy about bread baking since the temperatures have risen. Sounds like a nice lunch!

You're the only other (North American) I've ever known who uses sumac! I was interested to it by my Kurdish friends, and put it on beef kabobs, but hadn't thought of it for hummus ...

Susan, my husband got it one time for some recipe and we've been hooked ever since. He puts it on lots of things - eggs, tomatoes, steamed vegetables. . .

What a lovely lunch.

I just learned to cook dried beans in the slow cooker. It is life changing and I LOVE how it doesn't break all the skins.

And I must say I always love crunch with my lunch and I usually have chips. But popcorn, what a great idea! More economical and healthier than chips.

I love the idea of putting the slow cooker outside - who needs to heat the house up more in Florida? One question, though - do you have any problems with ants trying to get into the cooker?

Hi Kay,
No, I've never seen any bug trying to get in. I'm guessing the heat of the slow cooker deters them. If you find out differently, I'd appreciate knowing!

So I made baked beans for the cookout this weekend, and put the slow cooker outside. No ants!! And the kitchen stayed (relatively) cool. Thanks for the great idea and have a Happy 4th.

Kay! Thanks for reporting back. One of my friends was worried about the farm cats getting into her slow cooker outside. I wonder if the basement would work. . .
